There’s something wonderfully comforting about Italian food—simple, rustic, and packed with flavour. In this hands-on The Italian Staples cookery class, you’ll learn how to create a selection of classic Italian dishes from scratch, guided by our expert chef. From pillowy gnocchi to golden, olive oil-soaked focaccia, this is your opportunity to master the foundational techniques that define Italian home cooking.

You’ll begin with the soft, slow-stirred art of a creamy risotto, before moving on to hand-rolled gnocchi—light, tender and full of character. You’ll also make a traditional Panzanella salad, celebrating the bright, bold flavours of Italy’s countryside, and bake a rosemary-scented focaccia that’s perfect for sharing. Finally, you’ll explore a range of authentic pasta sauces that bring dried pasta to life with rich, robust taste.

The day begins with a coffee and chat with your chef, who’ll walk you through the dishes and techniques ahead. Then it’s into the kitchen for a combination of demonstrations and hands-on cooking, with plenty of guidance every step of the way.

We believe great cooking is all about confidence with techniques—not just following a recipe. You’ll work alongside fellow students in a relaxed, supportive environment, learning valuable skills you can recreate at home. For some dishes, prep may be done in advance so you can focus on the most rewarding parts of the process.

We don’t hand out printed recipes during the class so you can fully immerse yourself in the experience. A full recipe pack will be emailed to you after the session, and our chefs are always happy to answer any questions during or afterwards.

There will be a short break for lunch where you’ll head to the dining room to enjoy your culinary creations with a glass of wine or a soft drink.

Time:
10am – 3pm

When to arrive:
Please arrive 10 minutes before the class begins. You’ll be welcomed into our coffee lounge for a chat with your chef ahead of the session.

What to wear:
Please wear comfortable clothing and closed toe, non-slip footwear. An apron will be provided for you to use during the class.

What to bring:
All equipment and ingredients are provided. If you’d like to take home any food you prepare, please bring suitable containers. Please note – we are unable to accept any responsibility or liability for food taken out of the cookery school.
