Marry Me Chicken Pasta Recipe
Serves: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
- 8 oz (225g) dried pasta (penne or rigatoni recommended)
- 1 tablespoon olive oil
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes (adjust to taste)
- ½ cup (120ml) chicken broth
- 1 cup (240ml) heavy cream
- ½ cup (50g) grated Parmesan cheese
- ½ cup (75g) sun-dried tomatoes, chopped
- 1 teaspoon dried oregano
- Fresh basil leaves, chopped, for garnish
How to Make Marry Me Chicken Pasta
1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve ½ cup of pasta water in case you need to adjust the sauce’s consistency later. Set the drained pasta aside.
2. Sear the Chicken
In a large skillet over medium heat, add the olive oil. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Prepare the Sauce
Using the same skillet, add the minced garlic and red pepper flakes. Sauté for about a minute until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet to enhance the flavour. Let it simmer for 2 minutes.
4. Add the Cream & Tomatoes
Reduce the heat to low and stir in the heavy cream, grated Parmesan cheese, sun-dried tomatoes, and dried oregano. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
5. Combine Chicken and Pasta
Return the cooked chicken to the skillet, stirring to coat it with the sauce. Add the drained pasta and toss everything together. If the sauce is too thick, stir in a little of the reserved pasta water until you reach the perfect consistency.
6. Garnish & Serve
Taste and adjust the seasoning with salt and pepper if needed. Garnish with freshly chopped basil leaves and serve immediately.
Tips & Variations
Pair It With Wine – A glass of Chardonnay or Pinot Grigio complements the creamy sauce beautifully.
Make It Extra Decadent – Add crispy pancetta or bacon for an extra layer of flavour.
Want a Lighter Version? – Swap heavy cream for half-and-half or use Greek yogurt for a healthier alternative.
This Marry Me Chicken Pasta is rich, creamy, and bursting with flavour—a dish truly worthy of its name. Whether you’re cooking for a special occasion or simply want to treat yourself to something indulgent, this recipe is sure to impress.
