Step into the elegant and refined world of classic French patisserie in this immersive, hands-on experience. Whether you’re looking to master the elusive macaron or explore the beauty of buttery pastries and delicate desserts, this class will guide you through essential techniques with a focus on precision, finesse, and flavour.
Guided by our expert chef, you’ll begin by tackling the iconic Macarons—learning how to achieve their crisp shell, chewy centre, and smooth finish, paired with a rich and silky Pastry Cream. You’ll then explore traditional pastry techniques with a golden, caramelised Tarte Tatin, before diving into the art of enriched dough with a soft and indulgent Chocolate Brioche. On the savoury side, you’ll also prepare an elegant Wild Mushroom and Potato Pithiviers, a puff pastry showstopper perfect for any occasion.
The class begins with a warm welcome and a coffee, giving you time to chat with your chef about the day ahead. You’ll then move into the kitchen for a mix of demonstrations and hands-on cookery, where you’ll fold, pipe, roll and glaze your way through a stunning French menu.
We believe that great cooking is all about understanding techniques, so we focus on developing practical skills that you can use time and again. To make the most of your time in the kitchen, some elements may be pre-prepared for you—allowing you to concentrate on the key parts of each dish and get the most from the hands-on experience.
We don’t hand out printed recipes during the session, so you can stay fully present and enjoy the process—but we’ll send a full recipe pack to your inbox after the class. Our chefs are always happy to answer questions during or after your session.
There will be a short break for lunch where you’ll head to the dining room to enjoy your patisserie creations with a glass of wine or a soft drink.

Time:
10am – 3pm
When to arrive:
Please arrive 10 minutes prior to the start of the class. On arrival, you’ll be welcomed in our coffee lounge and introduced to your chef to go through the day’s menu.
What to wear:
Please wear comfortable clothing and closed-toe, non-slip footwear. Aprons will be provided for you to use during the class.
What to bring:
All equipment and ingredients are provided. If you wish to take any food that you have made home with you, please bring suitable containers. Please note – we are unable to accept any responsibility or liability for food taken out of the cookery school.
