Celebrate the fresh, delicate flavours of the sea in our Fabulous Fish & Shellfish class—a hands-on experience designed to help you master the art of cooking fish and shellfish with confidence and flair. Guided by our expert chef, you’ll learn essential techniques to get the best from your ingredients, while exploring a menu full of bold, vibrant dishes from across the globe.
We’ll begin with a beautifully balanced Vietnamese Squid Salad, bursting with freshness and zing. You’ll also prepare grilled Sardines with Lemon, Oregano and Rocket, a Mediterranean classic that’s simple but full of character. Then, you’ll move on to whole fish preparation with Sea Bream, cooked with aromatic Fennel and Black Olives, and create mouthwatering Tiger Prawns with Garlic and Ginger, full of warming, punchy flavour.
In addition to your hands-on dishes, your chef will demonstrate how to make a rich, flavourful Fish Stock from scratch—an essential base for seafood cookery—and then transform it into a luxurious Classic Shellfish Bisque that’s packed with depth and elegance.
We begin the day with a coffee and a chat with your chef, who’ll guide you through the menu and techniques ahead. Then it’s through to the kitchen for a series of demonstrations followed by plenty of practical cooking, as you fillet, season, sear and plate your way through the menu under expert guidance.
We believe great cooking is about mastering techniques, not just following recipes. You’ll work with other students in a fun, hands-on environment, with plenty of support from our professional chef instructors. For some dishes, elements may be pre-prepared so you can maximise your time focusing on key skills and hands-on cooking.
We don’t hand out printed recipes during the class so that you can enjoy the experience without distractions, but we’ll email a full recipe pack to you after the class. Our chefs are always happy to answer questions during or after your session.
There will be a short break for lunch where you’ll head to the dining room to enjoy your culinary creations with a glass of wine or soft drink.

When to arrive:
Please arrive 10 minutes prior to the commencement of the class. On arrival, you will be directed to our coffee lounge where you can meet the chef and chat about the class.
What to wear:
Please wear comfortable clothing and closed toe, non-slip footwear. An apron will be provided for you to use during the class.
What to bring:
Everything you need for the class will be provided for you. If you wish to take any food that you have cooked home with you, please bring suitable containers. Please note – we are unable to accept any responsibility or liability for food taken out of the cookery school.
