Celebrate the fresh, delicate flavours of the sea in our Fabulous Fish & Shellfish class—a hands-on experience designed to help you master the art of cooking seafood with confidence and flair. Guided by our expert chef, you’ll learn essential techniques to get the best from your ingredients while exploring a menu inspired by bold, vibrant flavours from around the world.

You’ll begin with a bright, refreshing dish that showcases the balance of freshness, acidity, and texture that seafood pairs so beautifully with. From there, you’ll move on to simple yet flavourful preparations that highlight the natural character of the ingredients, learning how to cook them perfectly while enhancing them with carefully chosen herbs, spices, and aromatics. As the class progresses, you’ll gain confidence in preparing and cooking whole fish, discovering techniques that bring out depth of flavour and create beautifully balanced dishes.

In addition to your hands-on cooking, your chef will also demonstrate how to make a rich, flavourful seafood stock from scratch—an essential foundation for many classic recipes—and how it can be transformed into a luxurious, deeply flavoured soup that celebrates the elegance of shellfish cookery.

We begin the day with a coffee and a chat with your chef, who’ll guide you through the menu and techniques ahead. Then it’s through to the kitchen for a series of demonstrations followed by plenty of practical cooking, as you fillet, season, sear and plate your way through the menu under expert guidance.

We believe great cooking is about mastering techniques, not just following recipes. You’ll work with other students in a fun, hands-on environment, with plenty of support from our professional chef instructors. For some dishes, elements may be pre-prepared so you can maximise your time focusing on key skills and hands-on cooking.

We don’t hand out printed recipes during the class so that you can enjoy the experience without distractions, but we’ll email a full recipe pack to you after the class. Our chefs are always happy to answer questions during or after your session.

There will be a short break for lunch where you’ll head to the dining room to enjoy your culinary creations with a glass of wine or a soft drink.

Time:
10am – 3pm

When to arrive:
Please arrive 10 minutes prior to the commencement of the class. On arrival, you will be directed to our coffee lounge where you can meet the chef and chat about the class.

What to wear:
Please wear comfortable clothing and closed toe, non-slip footwear. An apron will be provided for you to use during the class.

What to bring:
Everything you need for the class will be provided for you. If you wish to take any food that you have cooked home with you, please bring suitable containers. Please note – we are unable to accept any responsibility or liability for food taken out of the cookery school.
