Creamy Tuscan Gnocchi Recipe

Ingredients:

500g potato gnocchi

1 tbsp olive oil

2 cloves garlic, minced

½ tsp red pepper flakes (optional, for heat)

200g baby spinach

100g sun-dried tomatoes, chopped

200ml double cream

100ml vegetable broth

50g grated Parmesan (or vegetarian alternative)

1 tsp dried oregano

Salt & pepper, to taste

Fresh basil, for garnish

How to Make Creamy Tuscan Gnocchi

  1. Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions—typically, they’re ready when they float to the surface (about 2 minutes). Drain and set aside.

 

  1. Sauté the Aromatics

In a large pan, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, stirring for about a minute until fragrant.

 

  1. Create the Creamy Sauce

Stir in the sun-dried tomatoes and spinach, allowing the spinach to wilt. Pour in the double cream and vegetable broth, then add the grated Parmesan and oregano. Let it simmer gently for 3-4 minutes until the sauce thickens slightly.
